CHICKEN RIGGIES

Karin says:"Chicken Riggies is a native dish in these parts. So if ya love Italian food, this recipe is a keeper for sure!(Riggies is short for rigatoni pasta"
2 lb. ~ Skinless chicken breast
1 ~ Stick of butter (the real stuff)
1 Tbs ~ Chopped garlic
1 ~ Large onion (chopped)
2 ~ Green peppers (chopped)
3/4 C ~ Sweet wine (optional)
3/4 tsp ~ Dried red pepper
3/4 tps ~ Dried basil
1/2 tsp ~ Salt
1/4 tsp ~ Pepper
15 oz can ~ Tomato sauce
15 oz can ~ Diced tomatoes
1/2 C ~ Fresh chopped mushrooms
1/2 pint ~ Heavy cream
1/2 C ~ Grated parm. cheese
Box of Rigatoni pasta
           

~Cube and FLOUR chicken. Cook in melted butter until tender.
~Add all ingreds. EXCEPT for cream, shrooms and cheese.
~Simmer for one hour.
~Start pasta. Add remaining three ingreds. to sauce.
~Spoon over cooked pasta and enjoy!!
